Pizza Dough
| 2 c.+ fancy pastry flour | Combine flours and yeast. Heat water in microwave to 120o or warm on wrist, about 1 min. 20 sec. Add water and olive oil to mixture. Mix well with spoon then by hand. Dough should not be sticky. Add more flour as needed. |
| 1 c. white whole wheat or spelt flour | Knead dough by hand or with dough hook about 5 min. Dough should have elastic texture. Lightly coat bowl with olive oil then roll dough in bowl. Cover with plate and set in warm place for about 1 hr. or until dough doubles in size. |
| 2 tsp. instant yeast | Prepare toppings while dough is rising. Punch down dough then roll out on floured surface. |
| 1 c. warm milk or water 2 T. olive oil |
Preheat oven to 450o with rack in top third of oven. Lay out dough on pizza pan or cookie sheet lightly coated with cornmeal or vegetable shortening. Spread with tomato sauce, cheeses, and toppings. Sprinkle Parmesan cheese on top. Bake pizza on upper rack about 10 min., until cheeses bubble. |
Toppings: fresh pureed or chopped tomatoes or tomato sauce; grated cheeses such as Parmesan, mozzarella, and/or jalapeno cheddar; sliced onions; grated garlic cloves; sliced mushrooms; sliced squash; chopped broccoli or kale; and/or other available veggies.
