| 2 c. spelt berries |
Rinse spelt in water. Drain. Place in pot and cover with water. |
| 1 onion |
Peel, rinse onion. Cut into pieces in serrated pan or vegetable steamer insert set over spelt. Cover. Cook about 30 min. Stir spelt and add more water as needed to avoid spelt from sticking to pan. Cook to desired consistency, crunchy or soft like rice. |
| pasta sauce |
Stir onion, pasta sauce, and desired optional veggies into spelt. Serve warm. If frozen veggies used, thaw and cook in microwave. |

Parmesan may be grated over spelt mixture. |
