Stuffed Peppers

1 cup rice or spelt berries peppers carrots, diced corn tomatoes, diced pole beans, diced onions, diced cumin for taste, optional

Cook rice or spelt. Cut tops off peppers and remove seeds. Stuff with remaining ingredients. Place in covered casserole dish with 0.5 inches of water in bottom. Bake at 350* for 35 min. Read Ingredient Sources to find out where to purchase ingredients from local independent stores. |
