Raw Dairy + CSA

Groundwork Farms offers raw dairy products, eggs and bread year round plus produce during the growing season.

***WEEKLY DELIVERIES OF LOCAL DAIRY PRODUCTS, EGGS, and BREAD***
GroundWork Farms CSA and Buying Club is based in Centre County and delivers foods from a group of local farmers to Lewisburg every Thursday afternoon.  Customers sign up for 13 weeks of deliveries.  We would like to resume deliveries to Lewisburg in early November.  Let me know if you are interested in signing up.  My contact information is at the bottom of this letter.

**HOW DOES IT WORK?**
For the dairy CSA, a customer signs up for a quantity of dairy products each week (in the form of large or small "units") and then each week (for 3 months) can order what specific products he or she would like.  I've included the list of all our products below.  The prices are: $3.75 for a small unit, $6.50 for a large unit.  (it can be confusing so call if you have questions about how it works).

**THE SKINNY on RAW DAIRY**
The dairy products are raw products—they are unpasteurized and  have not been homogenized.  The process of pasteurization came about in response to very valid health concerns earlier in the 20th century.  Since then, farm methods and equipment have changed considerably, with the addition of stainless steel bulk tanks with circulation systems, milking lines that can be easily sanitized, milking machines, and other innovations.  At this point, pasteurization, while possibly not absolutely unnecessary, is certainly less necessary than it was in the past.   In Pennsylvania, farmers can acquire a Raw Milk License, which includes regular inspections by health inspectors to ensure the products are safe.  Raymond Fisher, the dairy farmer I work with, has been licensed to sell raw milk products for a number of years now and has not had any complaints related to their safety from either the inspectors or customers.

**A FEW BENEFITS OF RAW MILK FROM GRASS-FED COWS:**
***Beneficial enzymes, proteins, fats, and bacterial have not been destroyed by the pasteurization process

***Enzymes that allow your body to absorb calcium and other minerals are in tact, rather than destroyed during pasteurization (the much-touted calcium benefit from most milk is greatly exaggerated for this reason)

***Raw products spoil naturally and safely, with the bacteria that are present multiplying to a level that effects taste.  Pasteurized products are more likely to cause  health problems if they are consumed after spoilage has occurred.

***Spring Bank Acres cows receive no grain—they are entirely grass fed, which means high levels of beneficial (in fact essential) omega 3 fatty acids and Conjugated Linoleic Acids, both of which are absent or minimally present in products from grain-fed animals.

**THE EGGS**
Eggs from Spring Bank Acres’ free range hens, fed only organic grain, plants, and bugs, as nature intended.  $3.50 per dozen for 13 weeks

**THE BREAD**
Slightly sweet, soft, organic whole wheat loaves of bread from baker Bena King of Rebersburg.  $2.75 per loaf for 13 weeks.

**DELIVERY**
These products are all delivered to a convenient location in downtown Lewisburg each Thursday afternoon.  They are stored in refrigerator so you can pick them up at your convenience.  There is a coordination/delivery fee of $3.50 per week that covers organization, relaying your orders to the farmers, and driving time and mileage (approx. 65 miles round trip).
